
The latest operation to welcome amateur chefs from around the world is the Red Bridge Restaurant, Bar and Cooking School, a stylish venue located on the banks of the Hoi An River. The school is to offer a variety of courses and currently operates a half-day program which includes a market walk, cooking lesson and lunch.
Pupils start the day at 9am with a coffee at Hai's Scout Café in the centre of old Hoi An town. Led by a local chef, the group visits Hoi An's colourful market, experiencing the almost overwhelming sights, sounds and aromas of this bizarre bazaar. They can interact with the local sellers and purchase some of the ingredients to be used in the cooking lesson later.
Then board the boat for a leisurely cruise along the river to the school proper. This gives a chance to view local river life, always a fascinating vignette.
In the classroom, the group will be taught the basics of the local cuisine, while each member helps prepare special dishes from ingredients purchased earlier. Following the class, the group sits down together to enjoy the meal, savouring the morning's handiwork over a leisurely lunch in the restaurant.
Lunch - and lessons - finish around 1pm, leaving the rest of the day free for sightseeing. Cost per person is US$12 including a local, English-speaking guide and chef, the cooking demonstration, boat trip, all recipes and notes, coffee or tea and of course lunch.
